Don't mind my title, it just came to me so i jot it down..*i realise, its about time i get a camera phone* this way i wouldn't miss taking pictures of my creation of dishes during classes...deng!!!
Anyways i just came back from kitchen practical class today, dead tired..but i had a great time today, was looking forward to class. Menu of the day was, Gnocchi with bechamel sauce and cheese, and main course is....Lamb stew with apricot, prunes and couscous raisin.
At first i thought what a weird combination, seriously i've never heard of such combination between fruits and lamb, but my taste buds proves me WRONG..it was awesome...okok before i go there let me explain a lil' bout gnocchi...
Gnocchi- its suppose to be an italian dish made out of potatoes, but here i use flour and butter, milk and egg. Its call a choux pastry...*messy work* but instead of the normal baking of the pastry, it is blanch till it raises in boiling water...and then the bechamel sauce (consist of flour,butter, and milk-more milk) the base of this is white roux which is done on a low heat, by combining equal portion of butter and flour and then the milk is added...it is then stirred on low heat till it thickens...the Gnocchi is place on a plate and the bechamel sauce goes ontop and topped off with a generous amount of mozzarella cheese...
LAMB stew- This is awesome...here i used a kamb shoulder..i have to debone it myself and portioning is done by me as well, will not go into detail because it is abit long..here i had to us canned prunes and apricots, if it is substitute with fresh fruits, it would taste a thousand times better... ok the ingredients for the stew are, lamb shoulder, apricots, prunes, white wine, tomato paste, tomato diced, onion diced, garlic crushed, stock. very simple to make this...the end result was the sweetness the prunes and the apricots gives, of these were convenient food, if it was fresh...awesome blossom man...anyways if u wanna learn how to make it,,,let me know..hahah
